17 Keto Ice Cream Recipes for a Low Carb Sweet Treat

December 14, 2018 Ketogenic Diet, Low Carb, Recipes

Ice cream is just one of those things you can’t live without.

Sure, you can last a few weeks without picking any up from the store but the moment you get some, all the wonderful ice cream memories come rushing back.

And I don’t know about you, but I have the hardest time resisting eating the whole container in one sitting – pint or half gallon.

Since the store-bought versions are totally not good for you, especially when they’re so full of sugar and unknown ingredients, you really have to control your urges.

Or do you…?

To make this unhealthy addiction a little more healthy, and safe to eat while following a low carb keto diet, the best option is to make it yourself.

This way you know what exactly is going into it so you can control the sugar content and enjoy a sweet treat every now and then.

And would you believe me if I said these keto ice cream recipes make for awesome fat bombs?!

How to Make Keto Ice Cream

Believe it or not, ice cream really isn’t that difficult to make.

So before we get to the yummy keto ice cream recipes below, let’s go over the basics of making low carb ice cream.

The Mixing Machines

In order to make ice cream, you need a way to thoroughly mix all of the ingredients together. There are a few ways you can go about this so odds are you already have something on hand.

  • Countertop blender: The cheapest way is to use a blender since it’s a kitchen gadget most people already own. Something like this Ninja Countertop Blender works very well.
  • Immersion blender: If you don’t own a blender and want something cheaper, immersion blenders are relatively low in price and work very well for all sorts of things from cooking to baking to even making ice cream!
  • Food processor: Another option is a relatively inexpensive food processor. These are quite similar to countertop blenders and are versatile in what they can make.
  • Hand mixer: Some recipes also call for mixers, like this KitchenAid hand mixer. If you don’t have a stand mixer and don’t want to splurge on one, this is a great alternative.
  • Stand mixer: And of course, the beloved KitchenAid stand mixer will mix your ice cream very well. This mixer is also very handy for the next step: churning your ice cream!

The Ice Cream Making Machines

After mixing all of the ice cream ingredients together, you have one of two options: to churn or not to churn.

Churned ice creams typically tend to be smoother and creamier – think Eddy’s Slow Churned style.

However, no churn ice cream is still delicious so if you don’t have the money to spend on an ice cream maker, you don’t need one.

In terms of ice cream makers, you can either get:

  • KitchenAid Attachment: If you already have a KitchenAid stand mixer, or are thinking about getting one, there’s a KitchenAid Ice Cream Maker attachment you can hook up to your mixer.
  • Ice Cream Maker: These bad boys actually aren’t that expensive so you can get this Cuisinart Ice Cream Maker for less than $45 (as of 12/13/2018).

Note: Both of the ice cream maker bowls need to be frozen solid before using so you’ll need to put the bowl in the freezer at least 24 hours before you need it.

If you end up choosing the no churn ice cream style, you might have to mix it every 30 minutes while it’s chilling in the freezer, but that’s no biggie.

17 Best Keto Ice Cream Recipes

Making ice cream obviously isn’t as easy as picking some up from the store. And having to wait for them to set as opposed to eating right after buying is a bummer.

But sometimes we have to make sacrifices for the things we love, and in this case, it’s making low carb ice cream and waiting for it to get firm.

Thankfully, it’ll all be worth it in the end. I promise.

So without further ado, these are the best keto diet ice cream recipes around and they’re all waiting for you to indulge in them.
